Cookies! It is my favorite time of the year for cookies! I used to bake with my grandmother when I was a little girl and I am keeping the family tradition alive! My daughter loves to bake with me! So this week we have some almonds mixed with sunflower seeds and coconut to make the nest part of this cookie crunchy and nutritious. These cookies are low on sugar unless your jelly is super sweet and you do not have to use raspberry....that was just our choice of comfort this time around.
RECIPE
Chop some almonds, sunflower seeds and coconut in your food processor.
1/2 cup unsalted butter
1/4 cup of sugar
2 small egg yolks or 1 large egg yolk (save the whites)
1/2 tsp almond extract
1 cup flour
pinch of salt
Jam of your choice
Oven 180C (350F)
Line cookie sheet with cooking sheet paper (parchment paper)
Cream butter and sugar add egg yolk(s), extract, flour and salt mix well.
Keep egg white(s) in separate bowl for later.
Chill mixed ingredients for about an hour
After chilled roll into small balls...dip into eggwhites..dip ball into nut/coconut mix put on cookie sheet... lightly
press finger into center of ball to create your little nest... put a small spoonful of jam in the center and bake till slightly brown or to your liking.
